Hydrodynamics: from Relativistic to Carroll

I will review various aspects of hydrodynamics as an effective field theory and focus in particular on the role of symmetries and patterns of symmetry breaking in constructing Euclidean thermal partition functions. I will show how such construction can diagnose what kind of symmetries are broken in the ground state of putative exotic field theories, including higher-form, fractonic and Carrollian field theories.
